Avocado on Bagel
Ingredients:
1 x bagel
½ x avocado
1 x tomato
ground salt and pepper
salmon pieces - optional
Method:
• Toast two bagel halves, add sliced avocado and
top with ground salt and pepper.
• For variation add sliced tomato and pieces of
smoked salmon.
• Or, try vegemite or marmite on toast topped
with mashed avocado.
Avocado Smoothie
Ingredients:
1 x avocado
1 ½ cups milk
3 teaspoons sugar
1 scoop of ice-cream, ½ banana - optional
Method:
• Place the flesh of one medium sized avocado,
milk and sugar into a blender.
• Blend until smooth and pour into a glass.
• Replace the sugar with honey if you wish.
• Try adding a scoop of ice-cream or half a banana.
Quick Avocado Salad
Ingredients:
1 x medium or large sized avocado
2 x tomatoes
130 gm bag of prepared mesclun salad or similar
¼ cup “Kato” brand balsamic dressing
salt and pepper
Method:
• Slice the avocado and tomatoes
• Add to a 130g bag of Mesclun salad leaves and
toss through ¼ cup of balsamic dressing.
• Sprinkle generously with ground pepper and salt.
Dinner
Pasta with Avocado
Ingredients:
1 x large avocado
250 gm cooked spiral pasta
500 gm cooked chicken pieces - cubed
1 ½ cup roast capsicum slices
50 gm parmesan cheese
4 cloves roast garlic - optional
salt and pepper
good quality olive oil
Method:
• Cook the spiral pasta pieces according to the
instructions on the packet and leave to cool.
• Cook the chicken cubes in a pan with olive oil
for 15 to 20 minutes until lightly golden in colour.
Place in fridge to cool.
• Chop the avocado in pieces.
• Cut the capsicum into thin slices.
• Mix together the pasta, avocado, chicken, roast
capsicum and roast garlic.
• Add a little extra olive oil if required.
• Add freshly ground salt and pepper.
• Top with freshly grated parmesan.
• For variation and extra colour, add roast beetroot
wedges or roast pumpkin pieces.
Easy and Delicious Avocado Cheesecake
Ingredients:
250 gm packet of plain biscuits – arrowroot or
wine
250 -300 gm butter
500 gm pre-made Cheesecake filling
2 x medium sized – or 1 large avocado
2 x lemons
Method:
• Finely crush the biscuits. Add the melted butter.
Mix well and press firmly into a 20cm flan or spring-form
tin.
• Soften the pre-made cheesecake filling in a
microwave-safe bowl in the microwave for 1 minute on
high.
• Add the avocados and lemon juice to the cheesecake
mix. Whisk together until smooth and creamy.
• Pour the mix onto the base and chill until set
(approximately 2 hours).
1 minute Guacamole
Ingredients:
2 x medium sized avocados
2 teaspoons sweet chilli sauce
1 x lemon - squeezed
2 x cloves of crushed garlic (optional)
Method:
• Mix together the avocados, sweet chilli sauce
and lemon juice
• Add 2 cloves of crushed garlic for extra flavour
• Serve with corn chips or crackers
Cool Avocado and Cucumber Soup (serves
5)
Ingredients:
2 x medium sized cucumbers
2 x medium sized avocados
2 cloves garlic
2 cups plain non fat yoghurt
1 cup ice cubes
pepper and salt
1/2 cup washed parsley (optional)
Method:
Peel and chop the cucumber.
Reserve 1 cup of cucumber pieces.
Combine all ingredients (except the 1 cup of cucumber)
in the blender
Puree until smooth.
Add the last cup of cucumber pieces - you may wish to
chop this up more finely.
Mix through and chill for at least 1 hour and then serve.
